Happy Sunday! As promised, here are a few of my favorites that I've been enjoying throughout the fast some of us have undertaken.  I'm really intending this to be the start of a wonderfully healthy new way of eating and relating to food and I hope some of you will join in!

Before I share the recipes, I'll tell you that I use that word "recipe" very lightly because I cook in the "old school" style which basically means I rarely measure things. Just remember it's always better to err on the side of too little, because you can always add more.

Easy Guacamole
What's in it:
- 1 medium avocado, very ripe
- 1/2 lime
- 1 Tbs salsa
- diced onion (or onion powder)
- diced fresh garlic (or garlic powder)
- crushed red pepper

How to make it:
Peel and mash the avocado (I like it fairly smooth, some like it a little chunkier). Squeeze the juice of the lime into the avocado. Add all other ingrediets to taste. That's it! Serve with baked tortilla chips or use a few spoonfuls with a bit of olive oil instead of salad dressing.
The tartness of the lime juice is what really makes it! You can add or remove any other ingredients as you wish to suit your taste.

Fruit Smoothies
What's in it:
Whatever you like! Here are some of my favorite combos:
- Strawberry (5 large) & Banana (1 small) 
(a handful of blackberries or blueberries are great in this, too!)
- Peach (1 medium) & Strawberry (5 large)
- Banana (1 small), Fig (5-6 dried), Cashew (handful, raw)
- 1 cup of your choice of milk (I like almond, hemp or rice)

How to make it:
Place ingredients in your blender along with a few ice cubes if you like it cold. Blend and enjoy! One of my favorite ladies, Brittany of Clumps of Mascara, makes some wonderful green smoothies that you may want to try also.

Fish Marinade & Glaze

What's in it:
- 1 Tbs worcestershire sauce
- 1 Tbs toasted sesame oil
- 1 tsp dijon mustard
- 1 tsp BBQ sauce

How to make it:
Multiply the amounts above by the number of pieces of fish you're making. Mix all ingredients, coat fish and allow to sit for at least one hour. Place under the broiler for 7-10 minutes, more if it's very thick cuts or if you like it more done. It's delicious and will be beautifully shiny.

Funlayo's Favorite Salad
What's in it:
- baby spring greens
- golden raisins
- slivered almonds
- shredded sharp cheddar cheese
- crushed red pepper
- sea salt
- toasted sesame oil
- lime

This is a great tangy, sweet and nutritious salad! I like a nice bowl full of lettuce, a small handful each of the rasins, almonds and cheese and a sprinkle each of the salt and pepper. The juice of 1/2 a lime and a bit of toasted sesame replace dressing. Toss it all together and enjoy!
 May be topped with fish, chicken, tofu or... whatever you like!
